Farmer's Cheese Ingredients:
  • 1 Liter soy milk
  • 3 Tablespoons vinegar
Filling Ingredients:
  • 1 recipe Farmer's Cheese
  • 2 Tablespoons sugar
  • 1 teaspoon vanilla
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ¼ cup raisins (optional)
Crepe Wrappers Ingredients:
  • 2¼ cups flour
  • 3¼ cups soy milk
  • ½ teaspoon salt
  • ½ teaspoon baking  powder
  • vegetable oil spray
Directions:
  1. Farmer's Cheese: Pour milk into a large pot and bring to almost boiling (about 5 minutes on high) stirring occasionally.
  2. When milk is about to boil, add vinegar and lower heat a bit. (Curds will start to form).
  3. Keep on fire, stirring occasionally for about 10 minutes.
  4. Pour through cheese cloth and let cheese drain for at least 2 hours.
  5. Filling: Mix cheese with other filling ingredients.
  6. Crepes: Mix ingredients for crepes together, making sure to get all the clumps out of the flour.
  7. Heat a crepe pan and spray with vegetable oil.
  8. Pour batter on pan to make a thin layer. Pour off any excess batter.
  9. Fry until the crepe looks like it is almost dried out.
  10. Flip crepe carefully and cook for about 10 seconds more.
  11. Flip out of pan and repeat until all the batter has been used.
  12. Blintzes: At the bottom edge of a crepe, place about a 1½ Tablespoons of filling and fold over once.
  13. Fold the sides in towards the middle.
  14. Gently roll crepe up to the top.
  15. Fry blintzes on each side until golden brown
