Makes 6 servings
Ingredients:
2 large eggplants, cut into ½-inch slices
½ cup olive oil
1 onion, diced
1 can diced tomatoes
4 cloves garlic
½ cup fresh cilantro
Directions:
Fry eggplant slices in olive oil until crispy.
Sauté onion and garlic for 2-3 minutes until soft.
Add diced tomatoes and cilantro.
Simmer for 10 minutes.
Add eggplant and simmer for 10 more minutes.
