Matzah Ball Soup I

Ingredients:
  • Your favorite vegetable soup
    (I particularly like potatoes, celery, celery root, carrots, and onion with lots of parsley and dill. For added flavor, roast half of the vegetables in the oven first, blend that half, and then add to the soup with the other half of the veggies and vegetable broth)
  • 1 cup matzah meal
  • 3 Tablespoons potato starch
  • ¼ cup oil
  • 1 cup seltzer or water
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ teaspoon garlic

Directions:
  1. Make soup and put to simmer
  2. Mix of the rest of the ingredients together
  3. Refrigerate for ½ hour
  4. Roll into balls and place in boiling soup
  5. Simmer in soup until they grow (about 20 minutes)
  6. Take out of soup with a slotted spoon and let harden for 30 minutes to 1 hour
  7. Put the balls back in the soup about ½ hour before it's ready to be served to heat up
  8. Serve
