Makes about 4 servings

Ingredients:
  • 2 blocks extra-firm tofu
  • 2 Tablespoons soy sauce
  • 2 Tablespoons lemon juice
  • 2 Tablespoons ​olive oil
  • 2 Tablespoons Dijon mustard
  • 1 teaspoon sugar
  • 1 teaspoon basil
  • 1 teaspoon thyme
  • Salt and pepper to taste

Directions:
  1. First, prepare your tofu. Like most tofu recipes, it will taste best if you press the tofu first. It's an extra step, but it allows the tofu to absorb more of the flavorings and seasonings you add to it.
    Start by slicing the tofu into ½-inch thick strips, then cover with a towel and place something heavy on top (like a pan, some books, etc.) for at least 30 minutes. Then place the tofu back in the empty tofu containers, and freeze. Thaw in the microwave for about 3 - 4 minutes, and pat dry with a towel.
  2. Whisk together all ingredients except for tofu. Transfer to a shallow pan or zipped plastic bag then add the tofu, coating well.
  3. Allow tofu to marinate for at least one hour (the longer the better, turning to coat well with marinade).
  4. Heat oven to 375°F (190°C).
  5. Transfer tofu and marinade to baking dish and bake for 20 to 25 minutes, turning halfway through and pouring extra marinade over the tofu as needed.
